The cherries are handled like a live experiment, with temperature, airflow, and drying all dialled in to shape the cup, not just preserve it. What shows up is loud and precise at the same time. Winey sour grape hits first, followed by dense blackcurrant, a tart gooseberry edge, and a dry clove spice that holds everything together.
