Limited Release · Estate SeriesLight Roast · Anaerobic Process Grown at Anugraha. Processed by Roast. A coffee defined by what it doesn't have - bitterness and what it does: bright citrus clarity, a refined almond finish, and the clean structure that only a fully controlled process can deliver. The Estate Anugraha Estate sits at 1740 MASL in the Pulney Hills, Tamil Nadu, one of India's highest coffee-growing elevations. Jaivik Bharat organic certified, farmed without chemicals and producing Arabicas with the density and complexity that only high altitude and slow maturation can build. The Process Roast worked directly at origin to define and execute every step of this coffee's processing protocol. Deep red cherries are hand-picked at 21–23° Brix, rested for 6–8 hours to develop floral precursors, then pulped on-site and sealed in Ecotact-lined drums for cold anaerobic fermentation - monitored to a precise pH of 4.4. A cold stabilisation soak at 10–15°C follows, before the parchment is shade-dried slowly in thin layers on raised drying beds. The Roast Finished in-house on our Loring S70 Peregrine - India's first air roaster of its kind. Roast time 10:18, development at 12.9%, Agtron 81 on ground. A light-to-medium profile dialled entirely for clarity. The roast preserves the process, not the other way around. Tasting Notes Orange — bright, zesty sweetness. Sicilian Lemon — crisp, vibrant acidity. Almond — refined, tea-like finish with lingering sweetness. Brew Suited to all brew methods: pour over, Aeropress, espresso, cold brew. Performs best at a medium-fine to medium grind with water at 90–93°C.
