How to brew

Fold the paper filter, place it in the dripper, rinse with hot water, and discard the rinse water.

Grind 21 g of coffee to roughly kosher-salt fineness and add it to the brewer.

Saturate the grounds with just enough hot water to cover them and wait 15 seconds.

Pour in slow, even spirals until the scale reaches 360 g.

At about 3:00, remove the brewer and serve.
