US Brewers Cup Qualifier 2018
This recipe requires the Fellow Prismo attachment. Wade Preston of Prevail Coffee Roasters was the first person to use a Prismo in a competition environment, and this is his recipe that won first prize in the 2018 New Orleans qualifiers.

This target sits near the edge of the Comandante C40 MK4's range — it can do it, but you'll be close to the stops. Settings are approximate community estimates. Use them as a starting point, then taste: more bitter → go coarser, more sour → go finer.

18 g coffee · 205 g water
Place a paper filter on top of the Prismo metal filter in the cap and attach it to the brew chamber.
Press play to start. A randomly selected coffee-room loop plays throughout the brew while the coach speaks each instruction over it.
Ingredients
- 18 grams of ground coffee
- 205 grams of 98ºC water
How to brew

Place a paper filter on top of the Prismo metal filter in the cap and attach it to the brew chamber.

Grind 18 g of coffee very coarsely. To improve the grind consistency, sift the grounds using a 600-micron screen, such as a Kruve Sifter.

Add the grounds to the brew chamber.

Pour 50 g of 63ºC water over the coffee.

Stir gently to ensure all grounds are saturated. Let sit.

Pour an additional 155 g of 98ºC water.

Stir 5 times with the paddle and let sit.

Stir 5 times with the paddle.

Slowly press into the cup. Stop when you hear a hissing sound.
