This recipe starts out with a “pre-bypass”, adding hot water to the cup before brewing. By using both a metal and a paper filter, it produces an exceptionally clean, bright cup.

Insert one metal and one paper filter into the cap and rinse with hot water.

Add 35 g of ground coffee to the brew chamber.

Pour 100 g of hot water over the grounds.

Stir continuously.

Give the AeroPress a turbulent wiggle.
