WAC 2019 Winner
Wendelien van Bunnik is a Dutch barista. Her goal for this recipe was to enhance the acidity and limit the dry finish of the Salvadoran beans used in the 2019 finals. She recommends using the softest water you can find, as well as an Aesir filter.

How to brew

Place a paper filter in the cap and rinse with hot water.

Add 30 g of ground coffee to the brew chamber.

Pour 100 g of hot water over the grounds.

Stir 20 times.

Fasten the filter cap and push out any excess air. Let steep.

Flip the AeroPress and press into a cup.

Top up the brew with 120 g of hot water.

Cool the brew down to 60ºC by stirring and decanting.
