Tuomas Merikanto is a Finnish barista. This recipe won him the 2021 World AeroPress Championship, in the first-ever victory for a Finn - and also his first time taking part in any competition. The recommended water is Formula 2 from Third Wave Water.

Add 18 g of ground coffee to the brew chamber.

Pour 50 g of hot water over the grounds.

Stir very gently 3 times back and forth.

Pour an additional 150 g of hot water.

Push out any excess air, attach the filter cap, and let sit.

Flip the AeroPress and press into a pitcher.
